Peter Petroulas served as CEO of the GPO Grand Group in the heart of Sydney CBD from 2002 to 2020, until operations ceased due to the COVID-19 pandemic. Under his leadership, the group became the world’s first fully integrated drink, dine, and entertainment complex independent of any casino environment.
Located within the iconic Sydney GPO Building, the venue spanned over 3,300 square meters and housed 15 distinct concepts. Each venue delivered a premium yet welcoming experience, combining luxury with accessibility.

Peter’s experience extends beyond success into resilience. He led operations through the Global Financial Crisis, major city infrastructure disruptions like the Sydney Light Rail project, and ongoing industry challenges such as staffing, training, quality control, and operational efficiency. His expertise spans every aspect of hospitality operations.

Each venue within the GPO Grand Group was designed as a completely unique concept. From recruitment strategies to menu design and procurement, every element was tailored individually, allowing each space to develop its own identity, energy, and customer experience.

A defining feature of the group was its adaptability. All 15 venues could be transformed within two hours into a single, unified event space accommodating up to 1,600 guests. Remarkably, the system allowed all guests to be checked in, seated, and served their first food and drink within just 15 minutes.

Peter also played a key role in designing commercial kitchens, dining layouts, and entertainment spaces, optimizing both aesthetics and functionality. His deep understanding of spatial design continues to influence how environments are structured for performance and experience.
